The climate of the market

Night markets are a climate: cumin in the air, citrus piled like lanterns, a radio somewhere behind a curtain of rugs. Come hungry but not frantic. Eat standing first, then sit if a stool appears.

Follow the food

Follow the smell of bread. Follow the sound of a knife on a board. Ask what is in season rather than what is famous. A handful of herbs in paper is a better souvenir than a logo.

Money and manners

Keep cash in small notes. Smile when you decline. The market is a conversation with many rooms; you do not have to enter all of them.
